Food Production and Cooking - Level 2 (Part-Time)

• There are no formal entry requirements for this course but a genuine interest in professional cookery is preferred.

If you complete this course successfully you will receive an NVQ 2 Diploma in Food Production and Cooking CGLI.

• Maintaining a safe hygienic and secure working environment

• Maintaining and handling knives

• Working effectively as part of a hospitality team

• Maintaining food safety when storing preparing and cooking food

• Preparing fish, meat and poultry for basic dishes

• Cooking and finishing basic fish, meat and poultry dishes

• Preparing, cooking and finishing basic hot sauces, soups, pastry products and cold and hot desserts

• Soft skills such as improving punctuality, behaviours and excellent customer service

• Practical classes

• Short theory tests for all units throughout the year

Food production and cooking requires English and maths skills whether this be measuring ingredients, reading or adjusting recipes and deciding on cooking times based on weights.

You will develop your English and maths skills as part of your course throughout the academic year.

If you complete this course successfully you could progress onto an NVQ Level 3 Diploma in Professional Cookery.
